Resumen

Introduction. Mango (mangifera indica L.) is a climacteric fruit that after harvesting continues the process of respiration and ripening, which causes it to degrade. Objective. Identify the different postharvest technologies used in mango fruits, analyzing the quality of the fruit after their application, proposing the most appropriate mango post-harvest technologies for Colombia. Materials and methods. The methodological strategy was a technology watch based on secondary and tertiary sources, performing text mining analysis in Vantage Point software. Results. Sixty-one articles on postharvest technologies applied to mango fruits were identified worldwide, with Brazil being the country with the most research with 36 publications. The variety with the most studies was Tommy Atkins and the year with the most publications was 2010 with seven (7), followed by 2008, 2011, 2015 to 2017 with five (5) each. Conclusions. The most studied postharvest technologies were edible coatings based on essential oils, carnauba, cassava starch, use of ethephon; 1-MCP; controlled atmospheres; gamma radiation; refrigeration; ambient temperature; ambient temperature plus relative humidity (RH); packing in cartons; blanching; UV-C radiation; refrigeration plus edible coating and hydrothermal treatment. It is recommended for Colombia to apply technologies such as chitosan-based edible coatings and room temperature and relative humidity, given the benefits they provide in the preservation of mango fruit quality, shelf life and physicochemical parameters.
